‘Bistecca alla Fiorentina’ is undoubtedly one of the pillars of Florentine culinary traditions and today is almost a trademark of the city. Thickly cut, on the bone and cooked on live charcoal, it is served rare with its traditional accompaniment of cannellini beans topped with extra virgin olive oil or alternatively roast potatoes or a freshly prepared green salad.
